Polenta for Breakfast.

Polenta has a reputation for taking a long time to prepare, so I was glad to come up with this easy way to have polenta for breakfast in a few minutes:

  1. The night before, mix ¼ cup (non-instant!) polenta with 1 ½ cups cold water. Add a big pinch of salt and, if you like, a tablespoon of butter. Stir.
  2. Bring to a full boil, stir, cover, and turn off the heat under the pot.
  3. Get a good night’s sleep.
  4. In the morning, your polenta will be ready. I put mine in a bowl with a couple of sliced green onions and re-heated it in the microwave.

This makes one modest-sized bowl of cereal. You can scale it up as you wish, preserving the 6:1 water:polenta ratio. A lot of people like cheese in their polenta. If I did, I’d stir some grated cheese in after the morning re-heating.
